Love Well

Single Awareness Day.

For so many years, this holiday we celebrate was dreaded. I saw it creep up on the calendar and it mocked me. It was a day that I just wanted to get through. I didn’t want people to feel sorry for me. I told my dad not to send me flowers to work because it would make a scene. I wanted to skip the embarrassment of being single. The first time I heard this holiday called “Single Awareness Day”, I was sitting at church, alone. And, it made me laugh. It’s so true. If you have never been single on Valentine’s Day, then you have no idea what I’m talking about. But, if you have, then you know exactly what I mean. It’s like you have a huge sign on your forehead that reads, “please feel sorry for me b/c everyone knows that no one “loves” me today”. You have no date. You aren’t invited to parties. And, even churches host dinners that you must be a couple in order to attend. It’s very apparent that you are, in fact, single.

But the truth is, the longer I’m married the more couples I meet who do not celebrate Valentine’s Day. Some husbands think it’s a waste of money and that it’s a gimmick for companies to make money. Some aren’t happily married and just want the day to go away so they don’t have to feel like all the hearts are rubbing it their face that their relationship is a failure. Some are like me and just don’t want to stand in line for dinner or drop hundreds of dollars to know my husband loves me. And, some are like my husband who thinks that he should love me well everyday and not just specifically on a day that society tells him he should. 

What we all have in common is that we each want to be noticed and loved.

No matter the situation, feeling left out is unbearable. It makes you feel like no one wants you. We all want to be wanted, sought after, longed for. We all want someone to think we are a big deal. 

For us, Valentine’s has evolved. Our first Valentine’s Day we were dating, I made the mistake of telling KP that I don’t care about celebrating the holiay. What I really meant was that I don’t want to celebrate it the way society tells we should: reservations, long lines at restaurants for over-priced food, flowers that the florist has raised the price on just b/c its Valentine’s Day, or expensive gifts (because we seriously just had Christmas). My poor husband took that to mean, “Awesome! My wife doesn’t want to celebrate Valentine’s Day, so it’s just going to be like a regular, normal day.” What I didn’t realize is that he would just ignore the day completely. So, after a few years of trial and communication (I don’t see any part of it as “error”), I think we have figured it out. 

Well, he has figured me out. 

I love holidays. Any holiday (except Halloween). So I want to celebrate every holiday in some fashion. For me Valentine’s is making Cream Cajun Chicken Pasta and KP’s favorite cheesecake and having a quiet night at home. It means cards and boxes of candy. It means recognizing our love and making a big deal out of each other.

This day looks differently for everyone. Whatever it’s been in the past, we can each start this year by making the most of it because ultimately, shouldn’t we be loving all people well?

I wish I had looked for ways to love well. The world is full of people hurting and who just want to be noticed and loved. You may not realize, but there are people walking around avoiding eye-contact because they don’t want anyone to recognize that they feel unloved. There are those that will put on a smile and act like today is no different than any other, but deep down they truly want someone to make a big deal out of them. This year, I incorporated small gestures for those I love. Today isn’t just about celebrating KP and me; it’s about celebrating all the people I love. Taking an extra step to show them and maybe even make them feel like they are a “big deal” to me. 

Married women, I want you to know that there are singles out there longing to be noticed. Taking them to lunch or buying them a coffee will make their day. A card could possibly relieve some tension of the “single awareness”. Love them well. 

Singles, there are married women who have husbands that think today is Hallmark’s way of making money. They long to be noticed as much as you do. An animated Valentine with a sucker can change their day and give them hope. Love them well. 

Whether you are a hopeless romantic and absolutely LOVE today, or you are someone just trying to make it through the day, I encourage you to look around. Love the people God puts in your path today. Even if it’s the smallest gesture, like a smile, it can make someone’s day. 

I love that KP celebrates this holiday just because I want to celebrate it. But, what I love more is that he wants to love me well every single day. It’s more important for him to love me daily and not just make me a big deal on a holiday. It’s something that I can learn from. It’s more important to celebrate love every day. Loving others sets us apart from the world so that Jesus is seen in our lives and is glorified.

No matter what today holds for you, you can be thankful for a God who pursues you. The God who loved you so much, He sent His own Son to take your place. He gave each of us life! He loves so perfectly we can’t even comprehend the depth of it. 

You are lovable. You are treasured. You are precious. You are loved. 

Because you know this, go out and love well.

Valentine's Dinner with Friends

Last night we had a dinner party, celebrating Valentine's Day, with some of our friends. Sadly, I didn't take any pictures, but I wanted to share the recipes of what I made. Everything was SO good!!!!! I was very pleased with how it all turned out. The main course I had made before, but the appetizer and dessert were new for me.

Appetizer: Spicy Onion Tartlets

2 medium-large sweet onions, such as Vadalia, cut into very thin wedges (I cut mine in half and then sliced them very, very thin)
2 tbs low-sodium chicken broth or water
1/2-3/4 tsp hot paprika, preferably Hungarian (I used regular paprika b/c our guests don't like spicy)
1/4 tsp salt
1/3 cup coarsely grated reduced-fat gruyere cheese (I used swiss cheese)
2 (2.1 oz) pkg frozen mini phyllo pastry shells (I used puff pastry dough)

To prepare the filling, spray a non-stick skillet with non-stick cooking spray and set over medium heat. Add the onions, cover and cook until they are tender and have released their liquid, 10-12 minutes. Uncover and cook until the onions are golden, about 30 minutes (mine turned golden pretty quick after cooking them covered, so watch them during that 3o minute period....it may not take that long). Stir in the broth, paprika and salt; cook until the broth has evaporated and the onions are very tender, 3-4 minutes more. Cool 15 minutes. (I did this step the night before and refrigerated the onions. On the night of the party, the onions were already cooled for the next step.).

Preheat oven to 350 degrees.

Stir the cheese into the cooled filling. Place the pastry shells on a baking sheet (I pressed pieces of the pastry dough into my 24 ct. mini-muffin pan). Spoon a level 1 1/2 tsp filling into each shell. Bake until the pastry is lightly crisped and the filling is hot, 6-8 minutes (in the muffin tin with the puff pastry dough, it took them almost 20 minutes, so just watch them). Serve at once.

Main Course: Beef Daube Provençal

This classic French braised beef, red wine, and vegetable stew is simple and delicious. The flavor and texture allow you to keep it warm for your guests. Buy a whole-grain baguette, bagged salad greens, and bottled vinaigrette to round out the meal.

Yield: 6 servings (serving size: about 3/4 cup stew and 1/2 cup noodles)

2 teaspoons olive oil
12 garlic cloves, crushed
1 (2-pound) boneless chuck roast, trimmed and cut into 2-inch cubes
1 1/2 teaspoons salt, divided
1/2 teaspoon freshly ground black pepper, divided
1 cup red wine
2 cups chopped carrot
1 1/2 cups chopped onion
1/2 cup less-sodium beef broth
1 tablespoon tomato paste
1 teaspoon chopped fresh rosemary
1 teaspoon chopped fresh thyme
Dash of ground cloves
1 (14 1/2-ounce) can diced tomatoes
1 bay leaf
3 cups cooked medium egg noodles (about 4 cups uncooked noodles)

Preheat oven to 300°. (I baked mine at 350 degrees for 2 hours).

Heat oil in a small Dutch oven over low heat. Add garlic; cook 5 minutes or until garlic is fragrant, stirring occasionally. Remove garlic with a slotted spoon, and set aside. Increase heat to medium-high. Add beef to pan; sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook 5 minutes, browning on all sides. Remove beef from pan. Add wine to pan; bring to a boil, scraping pan to loosen browned bits. Add garlic, beef, 1 teaspoon salt, 1/4 teaspoon pepper, carrot, and next 8 ingredients (through bay leaf), and bring to a boil.

Cover and bake at 300° for 2 1/2 hours or until beef is tender. Discard bay leaf. Serve over noodles.

Note: To make in a slow cooker, prepare through Step 2. Place beef mixture in an electric slow cooker. Cover and cook on high for 5 hours.

Cooking Light, NOVEMBER 2004

Dessert: Chocolate Buttercream Cake
Barefoot Contessa

1 3/4 C flour
1C cocoa powder
1 1/2 tsp baking soda
1/4 tsp salt
3/4 C unsalted butter room temp
2/3 C gran sugar
2/3 C light brown sugar, packed
2 large eggs room temp
2 tsp vanilla extract
1 C buttermilk room temp
1/2 c sourcream room temp
2 Tbsp brewed coffee

Preheat oven to 350. Butter 2 (8 inch) round pans. In bowl, sift together flour, cocoa, soda and salt.

In mixer, cream butter and sugars on high about 5 min. Add eggs and vanilla. Combine buttermilk sourcream, and coffee. On low, add flour mixture and buttermilk mixture alternately till blended. Divide batter between 2 pan and bake 25 to 30 min. Cool.

Icing

10 oz bitterseweet chocolate
8 oz. semisweet chocolate
1/2 C egg whites ( 3l arge eggs)
1 C gran sugar
pinch cream of tarter
1/2 salt
1 lb (4 sticks) butter room temp
2 tsp vanilla extraact
2 tsp instant espresso powder dissolved in 1 tsp water
2 Tbsp dark rum

Chop choc and melt in bowl over simmering water til smooth. Cool.

Mix egg whites, sugar, cream tarter, and salt in bowl of mixer. Heat egg whites in bowl over simmering water till warm to touch about 5 min. Whisk on high for 5 min or til meringue is cool and holds a stiff peak.

Add butter 1 Tbsp at time while beatin on medium. Scrape bowl, add chocolate, vanilla, espresso, and rum for 1 min or till chocolate is blended.

Happy Valentine's Day

It will be two years in July that I met my sweet, wonderful husband on a blind date (Thanks to our friend, Suzi)! We were engaged 9 months after we met and were married 6 months after our engagement! We've now been married a little over 4 months! He's my best friend in the whole world, the love of my life, my dream come true and God's amazing gift to me! I love him with all of my heart! Today, I kept with my tradition that I started last year in making Creamy Cajun Chicken/Shrimp Pasta and a homemade cheesecake. It was SOOOO good!!!! The pasta was better than I remembered and I got TWO high-fives from Ken!!!! WOOHOO!!!! :) Last year, I made a White Chocolate Raspberry Cheesecake and it didn't turn out very well. The flavor was good, but this year I used a different recipe for White Chocolate Raspberry Cheesecake. It was YUMMY!!!!! I was so full after dinner!!!
We really enjoyed the day together. We woke up to SNOW...again!!!! We went to church and, afterward, had a great lunch with our pastor, his wife, and two sweet sweet ladies, Lacie and Amanda. We came home and started a fire and watch "Obsessed". I worked on some projects for upcoming events and then cooked dinner. Now we are sitting at the TV again and just relaxing! :)

The Weekend

This last weekend was fun and pretty relaxing. Now that Ken is working on weekends, I pretty much have Saturday and Sunday to get caught up on things....you know, things like laundry, cleaning, scrapbooking, TiVo. ;)

Friday night was not really special. I usually save my Walmart trip for Sunday after church b/c its so quiet, but I went Friday night instead. Going to the store the day before Valentine's Day is one of my favorite things to do. I love seeing people scramble to find that perfect card and dig through all the left over flowers. Its pretty funny. And this year....I even saw women!!! It wasn't just men!! When I got home and got settled in, I sat down and knitted my niece a blanket for her birthday. I made her one when she was born and its become more of a keepsake in her hope chest...so I thought it would be fun to make her one that she could play with.

For Valentine's Day, Ken and I decided that neither of us like to make a big deal out of the holiday. We didn't buy each other gifts or anything....I did get him a card, but oddly enough I still haven't given it to him. I did however make a nice dinner. As long as I got to just spend time with him, I was happy. I made a cajun pasta with chicken and shrimp (thanks Michelle!!! It was YUMMY!) and a homemade cheesecake. It was really my first one I've made from scratch SO I was pretty excited about it.....well that's a lie....I was REALLY nervous that it wasn't going to turn out well. A friend of mine at work kept telling me that cheesecakes are really easy, but people don't make them b/c they sound intimidating....so I was trusting her with that. Saturday I was up and running errands and getting little gifts for Lexis, Ruger, Flip, and Frasier (and yes, those are all animals and YES they all got new toys)!!! The rest of the day I was cooking. The cheesecake turned out just fine. I think when I do it again, I will make it the day before. It seemed to set up much better by Sunday. Ken and I enjoyed a nice evening just hanging out and we watched a little tv. Nothing exciting, but for me it was perfect just getting to be with him.

Sunday, I met a girlfriend for lunch and we went to see "He's Just Not That In To You." It was a really cute movie. I think we laughed through the whole thing. When Ken got off work, we headed to Tulsa. My mom has a family lunch the third Sunday of every month. Since Ken's birthday was this month, my mom changed it from lunch to dinner so he could be there. We had so much fun! It was fun just sitting around talking and laughing with my family. We had BBQ and my mom got this AMAZING cake from Nibble's in Tulsa. Its a German Chocolate cake with a layer of vanilla cheesecake in the middle. Its AMAZING!!!! They have THE best cakes and cupcakes in Tulsa!!!! My favorite story of the night was when I was telling my nephew that if he would come to Stillwater, Ken would take him for a ride in the police car. Caleb got so excited and looked at me and asked, "Will he dress up like one too?" HAHAHA!!! He didn't quite understand that Ken is a REAL police officer....Caleb thought he was just dressing up for fun. He then told Ken that he would dress up like "Lightening" (from "Cars") and bring his "Lightening" car too. Then they could drive together. It was too cute!

All in all the weekend was really great!
